SPICY CHICKEN SALAD
(this could also be perfect for Turkey left overs).
Ingredients:
4 or 5 boneless skinless chicken breasts
3 scallions, diced
1/2 red bell pepper, seeded & diced
1/2 cup celery, minced
1/2 cup golden raisins
1 ripe Bartlett pear
1 tbs mayonnaise
1/2 cup Pear Chipotle Grill Sauce
Salt & Pepper to taste
Toasted chopped pecans
Directions:
Cook chicken, let cool, and cut into 1/4" cubes. Mix mayonnaise and Pear Chipotle Grill Sauce until well blended. Combine all ingredients in large bowl and toss. Add salt and pepper to taste. Serve salad on a bed of butter lettuce, stuffed into fresh tomatoes, or with toasted pita wedges.
